To answer some questions... Amy, I used a pork tenderloin. It was very easy to marinate in the fridge and then to cut into pan-sized pieces! LK, I have seen those binder clips!! I went to Staples after my school-supply splurge and had to seriously control myself... I wanted everything! :) Burpandslurp, no worries-- I will definitely be updating my blog full of TA stories once everything gets underway. Brett- I haven't seen Julie & Julia-- YET! My Mom and I have big plans for that one. I know I'll love it! We've been YouTubing Julia Child lately haha.

ALSO: Sounds like I'm not the only school supply fan :) Don't you wish they had lunchboxes like that back when we were kids?!?! And as for the Asian-style cooking advice-- seriously appreciated :) Thanks!! Oh and Chadski-- first meal in the apartment sounds great! I'm always looking for easy pasta sauces that don't require much effort or much money (Alfredo sauce is so expensive at the store!). That sounds like a keeper!

All About Breakfast

What are your breakfasts like? Enjoyable? Rushed? Coffee-drenched? Or, (hope not!) SKIPPED???

If you're anything like my boyfriend, you just may be busy in the morning. Trying to sleep in till the last possible second, then breezing out the door with office files and a game plan for the new day, some busy-bodies skip breakfast in attempts to save time.

No more, I say!

I love breakfast. I love cereal, bagels, fruit cups, muffins, eggs, sausage, bacon, and yes-- coffee. Breakfast is my favorite meal! I don't skip breakfast for anything. If I wake up at 2pm (Promise, that hasn't happened since college! But IF...), then lunch may get skipped. But NEVER breakfast!

BUT Sarah! I have no time!
I can't make breakfast in the morning!


Well... then don't make breakfast in the morning :) Make it on Sunday, and enjoy it all week!

Delicious, Nutritious Quiche!

Version 1: Veggie Quiche with red and green peppers, onion, and scallions.

Simple Sunday Preperation:
Preheat oven to 425. Chop veggies and put in sprayed pie dish. Should be enough veggies to really fill dish! In separate bowl, mix milk (1 1/3 cup), biscuit mix (2/3 cup), and 4 eggs. Pour mixture over veggies. Top with shredded cheese. Bake for 20 minutes, then poke holes in top crust and bake for 10 more minutes (keeps quiche from being too runny by allowing moisture to escape. Learned that the hard way...)

Why I Love It:
  • Easy to grab and heat a slice before work; you can even tupperware some and eat at work! Or, enjoy at home! Dress it up with sides of salsa or sour cream, or even wrap it in a warm tortilla!
  • Filling, but healthy! Energy throughout the day!
  • Adding biscuit mix-- sometimes I find eggs to be a little... unsettling on the stomach. I don't know why, but I just can't handle too much egg in the morning. But, by adding the biscuit mix, it makes the dish a little less "egg-y" and really, really yummy! Also, you can afford to add the calories since the dish has no high-calorie crust.

I made a really yummy quiche a couple weeks back. Not for breakfast, though... for dinner. I call it the italian quiche. Coat and fry some sliced tomatoes, saute some minced garlic and onion slices, throw in some sliced fresh basil, pour in a seasoned egg mixture. It's really good. Top with cheese and also put it on the bottom before throwing in the veggies! i also have a super easy crust recipe, if you need it.

I like you pictures! You guys are too cute! I can't wait to see your face in person again. 16 months! 11 months down! WHAT!?

As a breakfast-skipper (I do eat a breakfast bar when I get to work so i'm not THAT bad!) that quiche looks amazing, I must think to do that on a Sunday night!

I never miss breakfast, either! If I do I'm absolutely miserable for the rest of the day... probably a touch of hypoglycemia. I just gotta eat! :)

That quiche looks SO good! Probably something I'll have to try when Ty's not home, he can't stand eggs. Not even biscuit-y eggs.

Glad to have caught up on your posts - sounds like it's been crazy in your neck of the woods! I am a breakfast skipper - I'll admit it, however I do LOVE me some breakfast. I'm just not hungry in the morning. Wanna hear a confession? (hiding my face) I'm going back to school. Eek! It's been about 8 years since I've been in college!! I'm taking an online course (since I work full time)and I think I'm more nervous about screwing up with that I would be actually sitting in class!! Oh geez. I need to relax. I'm excited, but I think the nerves are definitely more noteable. Oh well. Well, I just got back from my 10 year reuinion - so lots to post about!! Hopefully I'll get to it soon!

Hmmm, I just noticed I missed this post (missed reading it, that is), I think it's the two on the same day that threw me off! Thanks for the award -- I am planning on dealing with those on my blog, hopefully before school starts!

I don't skip breakfast. Or any other meal, if I can help it... (Those 6:00 evening classes make it hard to squeeze in dinner sometimes but I manage!)

I'm more of a Mediterranean breakfast person, I guess, some cereal or a donut and tea, and then a bigger lunch. I can't skip breakfast, but I can't eat tons of food first thing in the morning, either. Anyway, I'm so glad you've found recipes you like!

Im a breakfast skipper.....
unless someone else makes it and cleans it up. Im just too tired to do that first thing. My contribution as mother got leaner and leaner until All I do now is put the cereal boxes out. And make the coffee. Good thing my children are 18 and 21 now. I would eat it if there was bacon and sausage that had no calories and I could put syrup on them. Oh and crispy hash browns with peppers and onions. Oh and cornmeal pancakes.

Bonus points for the wish-list Wii! I'm sure Wii + Super Mario Galaxy must be quite cheap to pick up now -- everyone should play SMG, it's one of the best games ever made, and so damn easy to pick up!
